A day before you make 'Kuih Bangkit', fry 450g cornflour, 2 pandan leaves (cut into 2cm lenghts) over low heat in a wok until flour is light.
Step 1: In a mixing bowl, whisk 2 egg yolk and 100g castor sugar until thick.
Step 2: Add in 170ml coconut milk gradually.
Step 3: Whisk the mixture.
Step 4: The flour fried a day earlier is sieved and added to the mixture.
Step 5: Continue to whisk and stir the mixture.
Step 6: Transfer the mixture in to a bigger bowl and knead it to form soft dough.
Step 7: Add in more coconut milk and flour if necessary.
Step 8: Dust the Kuih Bangkit mould with some flour and choose any design you like!
Step 9: Bake in pre-heated oven at 150 degree celsius for 25 minutes. Bake longer to your desiring and cool before storing. There you have it!!
